Summer slimming idea #1: Quinoa and grilled vegetable salad

The ingredients (for 2 people)

• 1/2 cup quinoa
• 1 small zucchini
• 1/2 red pepper
• 1/2 yellow pepper
• 1/2 eggplant
• 1/2 avocado
• 1/2 red onion
• 1/2 clove of minced garlic
• 1 small handful of fresh mint leaves
• Juice of half a lemon
• Olive oil
• Salt and pepper
• Honey (optional)


The preparation

Start by cooking the quinoa according to the package directions, then leave to cool. Then cut the vegetables into medium-sized pieces before tossing them with a tablespoon of olive oil, salt and pepper. In an oven preheated to 200°C, grill the vegetables for around 20 minutes, spreading them out on a baking tray lined with baking paper, and turning them from time to time. Leave to cool slightly while you prepare your vinaigrette: in a small bowl, mix the lemon juice, a tablespoon of olive oil, a touch of honey (if you wish) and the minced garlic. Season with salt and pepper to taste. In a salad bowl, combine the cooled quinoa, grilled vegetables, diced avocado and fresh mint leaves. Drizzle with vinaigrette and mix, then refrigerate for around thirty minutes before serving.


Summer slimming idea #2: Fish in foil with vegetables

The ingredients (for 2 people)

• 2 fillets of white fish (such as cod, hake or sea bream)
• 1 small zucchini
• 1/2 red pepper
• 1/2 yellow pepper
• 1 carrot
• 1/2 red onion
• 1 lemon
• 1 clove of garlic, minced
• Olive oil
• Fresh herbs (like thyme, parsley or dill)
• Salt and pepper



The preparation

Preheat your oven to 200°C and start by cutting all the vegetables into thin strips or small pieces. Then prepare the papillotes: cut two large pieces of baking paper and place a fish fillet in the center of each piece. Drizzle each fillet with a tablespoon of olive oil and half a lemon, then add the minced garlic, salt and pepper. Spread the vegetables around and on top of the fish fillets. Season lightly with fresh herbs. Then fold the parchment paper, forming well-sealed packets to retain the steam inside. Place the packets on a baking tray and cook in the oven for around 20-25 minutes, until the fish and vegetables are very tender. Remove from the oven, let the papillotes rest for a few minutes before carefully opening them. Serve directly in foil packets or transfer to plates, with a small green salad for a perfectly balanced meal.



Summer slimming idea #3: Cold cucumber and mint soup


The ingredients (for 2 people)


• 2 large cucumbers
• 1 natural yogurt (around 125g)
• 1 clove of garlic
• 1 shallot
• 1 handful of fresh mint leaves
• Juice of half a lemon
• Olive oil
• Salt and pepper


The preparation


Start by peeling the cucumbers, slice them in half lengthwise, then remove the seeds with a spoon. Then cut them into coarse pieces. Slice the garlic and shallot. In a blender, mix the cucumber pieces, natural yogurt, minced garlic, shallot, mint leaves, lemon juice and two tablespoons of olive oil, until you obtain a smooth consistency. smooth and homogeneous. Add salt and pepper, then mix again. Pour the soup into a container, then refrigerate for at least an hour so that it is completely chilled. Stir the soup before serving, pour into bowls or glasses and place a few fresh mint leaves on top for a nice pop of color and flavor.


Slimming meal idea #4: Lettuce wraps with grilled chicken

The ingredients (for 2 people)


• 2 chicken breasts
• 1 romaine lettuce (or iceberg lettuce)
• 1 sliced ​​avocado
• 1 tomato cut into cubes
• 1/2 red pepper cut into thin strips
• 1/2 finely chopped red onion
• Olive oil
• Paprika
• Cumin
• Juice of half a lemon
• A few fresh coriander leaves
• Sauce of your choice (such as natural yogurt or a light lemon sauce)
• Salt and pepper


The preparation

Start by brushing the chicken breasts with a tablespoon of olive oil, a teaspoon of paprika, a teaspoon of cumin, salt and pepper. Then grill them over high heat in a large frying pan, for about 5-7 minutes on each side, until cooked through and golden brown. Remove from the heat and let sit for a few minutes before cutting them into thin strips. While the chicken is cooking, wash the lettuce leaves and dry them thoroughly, then cut the avocado, tomato, red pepper and red onion. To assemble the wraps, take a large leaf of lettuce and place a few strips of grilled chicken in the center. Add slices of avocado, diced tomatoes, strips of red pepper and chopped onions. Sprinkle with a little lemon juice and add a few fresh coriander leaves. If desired, add a spoonful of sauce of your choice for added flavor.
